Zachary's 24th was a low key celebration with some of our neighbor friends including, Beth, Zeb, Lindsey, Chad, Anne, and Jason. For our menu we had caesar salad, french bread, and lasagna. For zac's cake was a triple layer, extra fudgy chocolate. Wine and beer included some nice brown ale and merlot!
Lasagna:
4 pounds ground Beef
4 pounds lasagna pasta (the dried kind)
2 pounds mozzarella
2 pounds ricotta
2 pounds canned tomato sauce
2 onions
1/2 cup garlic
2 eggs
4 TBS Fresh parsley and oregano
1. Sweat one onion in heavy sauce pot, sweat 1/4 cup garlic add beef, and brown. Add tomato sauce. Allow to simmer add herbs at the end.
2. Bring to boil large pot of water salted, for dried pasta. Cook until aldente, oil and set aside.
3. Minced onion, and add garlic together in bowl, add cheeses, 2 TBS of herbs, and eggs. Keep 3 cups of mozzarella set off to the side. Seasoned cheese mixture and chill.
Assemble layers of the lasagna alternating sauce and cheese layers. Top with remaining mozzarella, and bake at 375 degrees F for 40-60 minutes until done. Keep covered with aluminum foil until 15 minutes to being done, to allow cheese to brown on the top. Allow to rest for 10 minutes before serving, enjoy!
